Meal plan Monday

inspired by Wendy! And then I found my way to I’m an Organized Junkie, where she found her inspiration.

With all my post-baby weight loss and generally eating healthier, cooking at home has become a necessity, regardless of how much I’ve disliked cooking. My kids were starting to think the beep of a microwave was the call for dinner. (ie, bean burritos…heat up canned beans, heat up tortillas, add toppings, voila!)

Fortunately, this forced cooking and searching for yummy, healthy recipes has become enjoyable to me. Imagine that! It was only a matter of time before I went from only being mostly like my mother to the complete transformation.

So here it is. Our dinner plans for this week. We are on a spending freeze this week and trying to use up the stuff in the pantry before we shop again. As you can see, mostly vegetarian.

Monday: Oatmeal pancakes with peanut butter apple slices.

Tuesday: vegetarian split pea soup (crock pot version) and homemade cornbread.

Wednesday: Whole Wheat pasta and tomato sauce. green beans

Thursday: egg casserole (because we get so many eggs from our hens, I try to do something big with them each week. This recipe uses 12 eggs!)

Friday: homemade cheese pizza with whatever toppings we can find in the cupboard (pineapple, etc)

Saturday: Jason makes Natalie’s enchiladas (in comments) and Spanish rice.

I just about fell off my chair when I saw your link at Laura’s blog. Glad you joined in. I wish we ate more vegetarian dishes; maybe I’ll try to slip one of yours in next week. 🙂

WENDY!!! You have got to adjust your blogger comments so I can leave a comment. I had gotten a blogger account a while back just so I could comment, but now its not accepting my password and I’m SOL unless you open it up to “other.”

Jason… Natalie has a delicious and easy enchilada recipe if you want it.. But I bet you’re fine on your own. Just letting you know just in case..

    Zoe & Jason
I will email you the is super easy and yummy!

Ok…since I couldn’t find your email and Jeffrey is downstairs….here ya go.
1 lb. of ground beef or chicken
    1 packet of taco seasoning
Cook that as if you were doing Tacos.
Then add a small can of diced green chilies and season with some other spices if you like.
Use small flour tortillas and put about 1/3 cup onto each tortilla, top with a little cheese and roll up. This makes about 6-7 enchiladas. Put them in a greased baking dish seam side down.
Cover enchilads with about 11/2-2 cups of enchilada sauce and top with 1-1/2 cups of mexican shredded cheese or whatever you like best. Cook at 350 for about 25 minutes or until cheese is melted. You can top with salsa if you like or just have it handy with sour cream to top.
You can really spice it up if you want with some chili pepper sauce, but this is just spicy enough for your family to enjoy.
