Its that time of year again: Diet and exercise on my mind.

We were super stressed with the move and the foster parenting stuff, and I lost site of my healthy eating and exercise. The idea of cooking was just another stress I couldn’t handle, and we went out to eat a lot! Wooops, I gained back my 15 pounds lost, and its time to get back on track!

I’ve somehow lost my blog about this book, but Superfoods RX is still one of my favorite books on healthy eating. I loaded up my fridge with a ton of fruits and veggies, and I’m eating right again.

Yesterday, for example, I had 1/2 cup cottage cheese and an orange for breakfast, a super salad for lunch (lettuce, spinach, carrots, tomato, red pepper, red cabbage, chickpeas, beets and Italian dressing), and lentil soup and roasted cauliflower for dinner. Today, I made homemade hummus and we’re having turkey and brown rice for dinner.

The exercise is calling, but I haven’t answered yet;)

A woman at my work is getting a bunch of people together to start a “Biggest Loser” competition at work. I need the extra motivation, so tomorrow morning I will be weighing in with the other fat-asses of the school. The gym is hard for me to commit to. Working out is hard, in general. I used to enjoy it. Hopefully I will find that place again.
